Strawberry Chardonnay Popsicles

When I stepped outside earlier this week, I could have sworn it was summer already.  Granted, we tend to enjoy warmer temperatures in Atlanta before the season actually hits, but I wasn’t expecting it to get this hot so soon.  When I came inside, all I wanted was a cool treat.  I initially thought about making some sorbet, but I didn’t feel like pulling out my ice cream maker.  (Now that I have a baby, finding time for more complex recipes is a bit challenging.)  So, instead, I quickly whipped up some Chardonnay Popsicles.

Just before I got pregnant, my sisters, mom, aunt, and I traveled to a local winery.  It was so fun to get away for a girl’s trip!  Even though I typically shy away from alcohol and wine (can you say headache?!), I found that I actually liked some of the wines.  So, I bought a few bottles that had fruity undertones.  Then, I got pregnant before I could enjoy them.  They have been sitting in my pantry ready for consumption.  But, now I’m still hesitant to drink them because I’m breastfeeding.  Can any of you expectant or new moms feel me?

Recently, I learned about Fre Alcohol-Removed Wine.  Little did I know that there is a way to safely enjoy wine while pregnant or breastfeeding.  Once the winemakers remove the wine through a special de-alcoholization process, less than 0.5% alcohol remains.  Plus, for those of us watching our figures or trying to lose that baby weight, it also has half the calories of traditional wine.  Major score!  But, what remains in Fre Chardonnay are the light fragrances and flavors (citrus and apple tones) of the wine.

I discovered that the wine makes a great foundation for a Popsicle.  Of course, I had to add some of my favorite fruits (strawberries and pineapples) to give it a twist.  They taste so good…refreshing and delicious!  See the recipe below.

Ingredients:

  • 1 1/2 cup Fre Chardonnay
  • 3/4 cup pineapple juice
  • 6 large strawberries

Instructions:

  1. Puree the strawberries in a blender with a little bit (1 to 2 tablespoons) of pineapple juice.  (Reserve some of the strawberry puree if you want to have fruit-tipped Popsicles.)
  2. Add the wine and pineapple juice to the strawberry puree and blend until well mixed.  (Reserve some of the wine and pineapple juice before blending if you want your Popsicles to have layers.)
  3. Fill Popsicle molds with the wine mixture and freeze.
  4. After the Popsicles start to set (approximately 60 minutes), insert Popsicle sticks.
  5. Allow to fully freeze for 4-6 hours or overnight.
  6. Enjoy!

Note: If you want to create layers, allow the first layer to set for 30-45 minutes before adding the second layer.  I created two versions of the Popsicles.  The first version follows the recipe above.  The second version included the strawberry puree in the first layer (the tip) and the wine and pineapple juice (minus the strawberries) in the second layer.

What I love about these Popsicles is that the addition of wine amps it up a bit and makes it a great celebratory dessert for Mother’s Day or a dinner party.
